Cream Cheese Frosting

This frosting is SUPER easy to put together and definitely makes cupcakes that much tastier.  I love these on my chocolate cupcakes, but my favorite combo is to put it on my pumpkin cupcakes!

Ingredients

8 oz cream cheese, at room temperature

6 Tbsp butter, at room temperature

2 1/2 c confectioners’ sugar

1 tsp vanilla extract

Instructions

  1. In a medium bowl, cream together the cream cheese and butter until smooth.
  2. Slowly add the confectioners’ sugar, beating on low until it won’t “poof” and then on high to break up any lumps.  I usually add about 1/4 to 1/2 c at a time and taste until it’s the sweetness I want for the particular cupcake I’m making.
  3. Beat until all lumps are gone.
  4. Add the vanilla and mix until completely integrated.
