Two of my favorite things, raspberry and chocolate, combine in this recipe to make one heck of a dessert. I took a cherry chocolate cupcake recipe and messed with it until I found a way I liked the way my … Continue reading

Cream Cheese Frosting
This frosting is SUPER easy to put together and definitely makes cupcakes that much tastier. I love these on my chocolate cupcakes, but my favorite combo is to put it on my pumpkin cupcakes!
Ingredients
8 oz cream cheese, at room temperature
6 Tbsp butter, at room temperature
2 1/2 c confectioners’ sugar
1 tsp vanilla extract
Instructions
- In a medium bowl, cream together the cream cheese and butter until smooth.
- Slowly add the confectioners’ sugar, beating on low until it won’t “poof” and then on high to break up any lumps. I usually add about 1/4 to 1/2 c at a time and taste until it’s the sweetness I want for the particular cupcake I’m making.
- Beat until all lumps are gone.
- Add the vanilla and mix until completely integrated.
Pumpkin Pie Cupcakes
This is the first year I’ve ever gotten to have a fall, so I’ve gone a little overboard on cramming as much fall-ish stuff into my house and life during these couple of months. My house is decked out in … Continue reading
Orange Chicken
Orange chicken is one of my favorites, but I HATE how I can only find it with either breading and fried (never thought those words would come out of my mouth) or tons of preservatives. So, I decided to experiment … Continue reading
Light Chocolate Chip Cookies
I love these chocolate chip cookies! They’re a little gooey, but not nearly as heavy as 99% of chocolate chip cookies I’ve had. Perfect if you’re wanting a little something sweet after dinner. The best part about this recipe is … Continue reading
3 Minute Chocolate Cake
I recently found a three minute chocolate cake that is absolutely to die for. You make it in the microwave in a coffee mug and it literally takes 3 minutes to make (and only 35 seconds to bake). Thanks to … Continue reading
Egg Muffins
These are some of my favorite quick breakfasts. They’re not actually muffins… They’re sort of like a quiche, but in individual serving sizes! Easy to make doesn’t begin to describe them, and you can get the kitchen cleaned up while … Continue reading
Fall Cleaning
Maybe I’m weird, but I do spring cleaning AND fall cleaning. I like the idea of having a totally clean house before I have to close up the windows for the next 8 months (since it stays cold and rainy … Continue reading
