Andes mints are one of my favorite candies. They’re the best part of Olive Garden as far as I’m concerned. This is my version of mint chocolate frosting that reminds me immensely of Andes mints. My favorite way to use mint chocolate frosting is on chocolate cake, vanilla cake, or peppermint cupcakes.
1/2 c butter
2/3 c cocoa powder
2 c powdered sugar
1/3 c milk
2 t mint extract
- In a stand mixer, cream the butter until light and fluffy.
- Add the cocoa powder.
- Alternate the milk and sugar until fully incorporated and smooth.
- Add the mint extract until completely mixed.
- If you want it thicker, add a little more powdered sugar; add more milk (a little at a time) if you want it thinner.
