When we decided to have a bunch of friends over for a Saturday night get-together, we decided to do fajita night. My favorite part of fajitas isn’t the chicken, or the pico de gallo (although that’s second), or the salsa, or cheese, or anything else. It’s the guacamole. There’s just something delicious about mashed up avocados and lime. And, the infamous “they” have decided that avocados are full of the good fat which makes them really good for you!
Recipe – Makes approximately 4 cups
6 avocados, mashed
2 tomatoes, diced
1 sweet onion, minced
1/4 c lime
2 t salt
1 T fresh cracked black pepper
2 T garlic, minced
- Combine all ingredients.
- Taste-test to determine salt, lime, and garlic amounts. The amounts I put down are really more of a starting place, because the size of your avocados and the sweetness/tartness you prefer will affect exactly how much of each you want to add.
- Leave a pit in the bowl to help reduce brownness and keep covered with plastic wrap all the way down on the guac whenever you’re not eating it to also help prevent discoloration. The discoloration isn’t an issue, and just makes it look a little gross. It will still taste totally fine!
