I LOVE Olive Garden. I hate how unhealthy everything is, including the salad. Did you know that one serving of the salad has 350 calories? It’s true. And let’s be honest, who goes to Olive Garden and only has one helping of salad? No one. So, I set out on a mission to come up with a lighter version that still has all the flavor.
Recipe – Makes 1 c of dressing
1/4 c light mayo
1/3 cup white vinegar
1 t vegetable oil
2 T agave nectar (you can use 3 T of corn syrup or sugar instead)
4 T Parmesan cheese, freshly grated
1 clove garlic, minced
1 T lemon juice
- Using a food processor, combine all ingredients until smooth.
- Transfer to a small mason jar, and use a couple of tablespoons per serving of salad.
- This dressing will keep for a week or so.
